  1. make the curry paste by putting the garlic (2), shallots (1), ginger paste (1 tsp), lemongrass (2 sticks), green chili (1 piece), cumin (1 tsp), and coriander in a food processor and blitzing until it becomes a paste.

  2. add some oil to the pan together with the paste. cook for 3 minutes.

  3. add the coconut cream (123 g) together with fish sauce (2 Tbsp), the zucchini (150 g) and mushrooms (200 g). let it simmer for 10 minutes.

  4. add salt, pepper, cumin (1 tsp) and the paneer (200 g). let it simmer for 2 more minutes.

  5. serve together with cooked rice. top it off with basil and chili. enjoy :)
